Cherry soft cake
- Flour- 2 cups
- Baking powder - 1 tsp
- butter -6 tbsp
- brown sugar-1 cup
- egg - 1
- milk - 2/3 cup
- sugar- for dusting
- whipped cream -to serve
For the topping
- black cherries-1 1/2 pound
- brown sugar- 1cup
- flour-1/2 cup
- butter melted- 1/4 cup
- preheat the oven to 375f
- to make the base ,sift flour and baking powder into a mixing bowl .
- Add the butter ,sugar ,egg and milk.Beat until the mixture becomes smooth ,then turn into the prepared pan and smooth the surface.
- sprinkle the drained fruit evenly over the batter mixture
- mix together the remaining topping ingredients and the spoon evenlyover the fruit .Bake for 40 min ,or until golden brown and the centre is firm to the touch.
- let cool ,then dust with confectioner's sugar .serve with whipped cream,if wished.
