Dark fruit salad cake
- Chopped mixed dried fruit,such as apples,apricots,purnes and peaches -1 cup
- Hot tea - 1 cup
- Self rising flour- 1 cup
- grated nut meg - 1 teaspon
- dark brown sugar - 1/3 cup
- oil - 3 tbsp
- milk - 3 tbsp
- Soak the dried fruits in the tea for several hours or overnight .drain and reserve the liquid .
- preheat the oven to 350f
- sift the flour into a bowl with the nutmeg .stir in the sugar,fruit and tea.Add the oil and milk and mix well .
- Spoon the mixture into the cake pan and sprinkle with raw sugar .Bake for 50-55 min ,or until firm .Turn out onto a wire rack to cool .
