Rich fruit cake
Make this cake few days before icing and store in an air tight container to mature.
- Rasin- 1 3/4 cup
- candied cherry - 1 cup
- Almond Chopped - 1 cup
- Mixed candied peel - 1/2 cup
- Lemon - 1
- Brandy - 2 tbsp
- All purpose flour - 2 1/4 cups
- Mixed spice - 1 1/4 tsp
- nutmeg grated - 1/2 tsp
- ground Almond - 1/2 cup
- Butter - 1 cup
- brown sugar- 1 1/4 cups
- Molasses - 1 tbsp
- egg - 5 nos
- preheat the oven to 275 f
- combine the ingredients in a large mixing bowl .Beat for 5 min until well mixed
- Spoon the mixture into the prepared cake pan .
- Make a slight depression in the centre .
- Bake in the centre of the oven for 3- 31/2 hours .Cover the top loosely with foil if it starts to brown too quickly .
- let the cake cool completely in the pan.
