Rich fruit cake

Rich fruit cake


Make this cake few days before icing and store in an air tight container to mature.


  • Rasin- 1 3/4 cup
  • candied cherry - 1 cup
  • Almond Chopped - 1 cup
  • Mixed candied peel - 1/2 cup
  • Lemon - 1
  • Brandy - 2 tbsp
  • All purpose flour - 2 1/4 cups
  • Mixed spice - 1 1/4 tsp
  • nutmeg grated - 1/2 tsp
  • ground Almond - 1/2 cup
  • Butter - 1 cup
  • brown sugar- 1 1/4 cups
  • Molasses - 1 tbsp
  • egg - 5 nos
  1. preheat the oven to 275 f
  2. combine the ingredients in a large mixing bowl .Beat  for 5 min until well mixed
  3. Spoon  the mixture into the prepared cake pan .
  4. Make a slight depression in the centre .
  5. Bake in the centre of the oven for 3- 31/2 hours .Cover the top loosely with foil if it starts to brown too quickly .
  6. let the cake cool completely in the pan.
