History of Cakes:

Cakes are made from various combinations of refined flour, some form of shortening, sweetening, eggs, milk, leavening agent, and flavoring. There are literally thousands of cakes recipes (some are bread-like and some rich and elaborate) and many are centuries old. Cake making is no longer a complicated procedure.Baking utensils and directions have been so perfected and simplified that even the amateur cook may easily become and expert baker. There are five basic types of cake, depending on the substance used for leavening.The most primitive peoples in the world began making cakes shortly after they discovered flour. In medieval England, the cakes that were described in writings were not cakes in the conventional sense. They were described as flour-based sweet foods as opposed to the description of breads, which were just flour-based foods without sweetening.Bread and cake were somewhat interchangeable words with the term "cake" being used for smaller breads. The earliest examples were found among the remains of Neolithic villages where archaeologists discovered simple cakes made from crushed grains, moistened, compacted and probably cooked on a hot stone. Today's version of this early cake would be oatcakes, though now we think of them more as a biscuit or cookie.Cakes were called "plakous" by the Greeks, from the word for "flat." These cakes were usually combinations of nuts and honey. They also had a cake called "satura," which was a flat heavy cake.During the Roman period, the name for cake (derived from the Greek term) became "placenta." They were also called "libum" by the Romans, and were primarily used as an offering to their gods. Placenta was more like a cheesecake, baked on a pastry base, or sometimes inside a pastry case.The terms "bread" and "cake" became interchangeable as years went by. The words themselves are of Anglo Saxon origin, and it's probable that the term cake was used for the smaller breads. Cakes were usually baked for special occasions because they were made with the finest and most expensive ingredients available to the cook. The wealthier you were, the more likely you might consume cake on a more frequent basis.By the middle of the 18th century, yeast had fallen into disuse as a raising agent for cakes in favor of beaten eggs. Once as much air as possible had been beaten in, the mixture would be poured into molds, often very elaborate creations, but sometimes as simple as two tin hoops, set on parchment paper on a cookie sheet. It is from these cake hoops that our modern cake pans developed.Cakes were considered a symbol of well being by early American cooks on the east coast, with each region of the country having their own favorites.By the early 19th century, due to the Industrial Revolution, baking ingredients became more affordable and readily available because of mass production and the railroads. WARM MARSHMALLOW DIPPED WITH FRUIT SKEWER


make marshmallow sauce

marshmallow- 500 gm
cream -100 ml
sugar - 40 gm
fruit fruits - strawberry,mango, kiwi]



  • Melt marshmallow in a sauce pan with 100 ml of cream
  • add little sugar in it 
  • mix it well untill  sauce consistency
  • Cut fresh fruits slice and  insert in a skewer 
  •  marshmallow sauce when keep in room temperature make sure it should be warm enough 
  • use some pink color marshmallow for your sauce it can help your sauce pink in color

  • Melt the white  chocolate using double boiling method


  • Make sure its melt completely









  • Paste melted chocolate on plastic transferable sheet

  • Use comb shaped scraper  for make thin lines

  • Immediatly roll that sheet on rolling pin

  • Keep in feezer  for 5 min ..


  • Take out plastic sheet from rolling pin and carefully take out plastic from chocolate.

  • butter- 300 gm
  • sugar -470gm
  • egg - 10 nos
  • baking powder - 10 gm
  • milk - 162 ml
  • cake flour - 500 gm
  • vanila essence - 5 ml


  1. preheat the oven to 350f
  2. beat the Butter  and sugar around 3 min .add egg into the mixture  one by one
  3. add cake flour ,baking  powder ,baking soda  into the mixture and fold slowly
  4. Do not over mix, add fresh milk,vanila essence into the mixture 
  5. Spoon the mixture into the cake pan.Bake for 50-55 min , .Turn out onto a wire rack to cool .

Raspberry panna cotta

  • Gelatin - 20 gm
  • double cream -250 gm
  • milk- 250 gm
  • vanila essence
  • sugar -25 gm
  • fresh raspberry -6 pcs

for sauce

  • rasperry paste -  200gm
  • sugar -150gm
  • water-150 gm

  1. Firstly soak gelatin in cold water until it soft
  2. place the cream ,milk,sugar in a pan.keep it in burner until boil
  3. add melted geltin in it
  4. Spoon the mixture into a ramekin mould with some half halves raspberry 
  5. keep in chiller for set atleat an hour
  6. For sauce, place sugar and water in a pan .After sugar melted add raspberry paste in it .keep simmer until it smooth.

OREO CHOCOLATE FUDGE

  • WHITE CHOCOLATE MELTED - 1 KG
  • OREO COOKIES -300 GM
  • CONDENSE MILK- 450 ML



  1. Firstly melt the white chocolate and mix it with condense milk
  2. crush the  oreo cookies
  3. mix all together and Spoon the mixture into the tray for set
  4. keep inside chiller for 1 hour

DELICIOUS CHOCOLATE BROWNIES WITH VANILA ICE CREAM

  • EGG- 10 NOS
  • SUGAR - 1 KG
  • BUTTER- 620 GM
  • DARK CHOCOLATE - 750 GM
  • CAKE FLOUR- 500 GM
  • BAKING POWDER -15 GM
  • WALNUT -125 GM
  • APRICOT-125 GM
  • PURNES - 125 GM
  • COCOA POWDER -50 GM
  • SALT -5 GM


  1. preheat the oven to 350f
  2. beat the Butter  and sugar around 5 min until mixture should be creamy
  3. .add egg into the mixture  one by one
  4. add cake flour ,baking  powder ,baking soda ,salt  and cocoa powder into the mixture and fold slowly
  5. Do not over mix, add  little amount of flour mix with  walnut,purnes,apricot and dark chocolate into the mixture 
  6. Spoon the mixture into the cake pan.Bake for 50-55 min , .Turn out onto a wire rack to cool 
  7. after cool topping with chocolate ganache and serve with ice cream

  • Chopped mixed dried fruit,such as apples,apricots,purnes and peaches -1 cup
  • Hot tea - 1 cup
  • Self rising flour- 1 cup
  • grated nut meg - 1 teaspon 
  • dark brown sugar - 1/3 cup 
  • oil - 3 tbsp
  • milk - 3 tbsp

  1. Soak the dried fruits in the tea for several hours or overnight .drain and reserve the liquid .
  2. preheat the oven to 350f
  3. sift the  flour into a bowl with the nutmeg .stir in the sugar,fruit and tea.Add  the oil and milk and mix well .
  4. Spoon the mixture into the cake pan and sprinkle with raw sugar .Bake for 50-55 min ,or until firm .Turn out onto a wire rack to cool .

  • Flour- 2 cups
  • Baking powder - 1 tsp
  • butter -6 tbsp
  • brown sugar-1 cup
  • egg - 1
  • milk - 2/3 cup
  • sugar- for dusting

For the topping

  • black cherries-1 1/2 pound
  • brown sugar- 1cup
  • flour-1/2 cup
  • butter melted- 1/4 cup

  1. preheat the oven to 375f
  2. to make the base ,sift flour and baking powder into a mixing bowl .
  3. Add the butter ,sugar ,egg and milk.Beat until the mixture becomes smooth ,then turn into the prepared pan and smooth the surface.
  4. sprinkle the drained fruit evenly over the batter mixture
  5. mix together the remaining topping ingredients and the spoon evenlyover the fruit .Bake for 40 min ,or until golden brown and the centre is firm to the touch.
  6. let cool ,then dust with confectioner's sugar .serve with whipped cream,if wished.

  • cream cheese - 4 cups
  • sugar - 1 cup
  • egg - 4
  • vanila extract - 1 tsp
  • cocoa powder ,dissolved in hot water -1/2 cup
  • cookies crushed - 1 cup



  1. preheat the oven to 350f
  2. beat the cheese until smooth and creamy .Add the sugar an d beat to incorporate .Beat in the eggs ,one at a time .Do not over mix
  3. Divide the mixture between two bowls.stir the vanilla into one,then add the chocolate mixture to the other. pour a cupful of the vanilla mixture into the centre of the pan to make an even layer .slowly pour oven a cupful of the batter in circular pattern until both are used up.
  4. set the pan in a larger baking tray and pour in hot water to come 1 1/2 inches up the sides of the cake pan .Bake until the top of the cake is golden ,about 1 1/2hrs. It will rise during baking but will sink later.Let cool in the pan on a rack 
  5. To turn out ,run a knife around the inside edge.Place a flat plate,bottom -side up ,over the pan and invert onto the plate.
  6. Sprinkle the crushed cookies evenly over the bottom ,gently place another plate over them,and invert again ,cover and chill for a least 3 hrs or overnight .To serve ,cut slices with sharp knife dipped in hot water.

For the pastry

  • Flour - 325 gm
  • Butter- 250 gm
  • Icing sugar- 125 gm
  • Egg -1
  • orange rind grated -1
  • Cold water -3tbsp

For the filling

  • Apple-900gm
  • sugar- 115 gm
  • corn flour- 2 tsp
  • ground cinnamon-1/2 tsp
  • ground nutmeg- 1/4 tsp

For the glaze 

  • egg white - 1
  • caster sugar - 1 tbsp
  1. preheat the oven to 200c
  2. To make the pastry, Sift the flour and salt into abowl and rub in the butter until the mixture e\resembles breadcrumbs.Stir in the orange rind then add the water and egg into the mix to a dough
  3. wrap and chill for 20 min
  4. Divide into two and use one half to line the pie dish.
  5. To make the filling, place all filling in gredients in a bowl and mix together .transfer to the lined pie dish.
  6. Roll out two -thirds of the remaining pastry to a circle and use to cover the apples.Press the edges together and trimmings and cut out strips of pastry and small stars and use to decorate the top of the pie.
  7. To glaze,brush the top with egg white and sprinkles with sugar make 2 or 3 holes with a skewer to allow steam to escape.
  8. Bake the pie above the centre of the oven for 40-45 min or until the pastry is golden brown.

A Delicious sticky chocolate banana cake 

  • Flour - 2 cups
  • Cocoa powder- 3 tbsp
  • Dark or light Brown sugar- 1/2 cup
  • Maple syrup -2 tbsp
  • Egg- 2 nos
  • Milk - 1 tbsp
  • oil - 4 tbsp
  • Bananas - 2 large ripe
For icing 

  • Icing Sugar- 11/2 cups
  • Cocoa powder - 2 tbsp
  • warm water - 1tbsp
  1. preheat the oven to 325 f
  2. sift the flour into a mixing bowl withg the cocoa .Stir in the sugar.
  3. make a well in the centre and add the syrup ,egg,milk, and oil
  4. Mash the bananas thoroughly and stir them into the mixture until thoroughly combined.
  5. spoon the mixture into the prepared pan and bake for 1 -1 1/4 hrs.
  6. Make the icing .Put the confectioners sugar and cocoa in a bowl and gradually add enough wate to make a mixture thick enough to coat the back of a wooden spoon .pour over the top of the cake .

  • brown sugar- 1 1/4 cups
  • Molasses - 1 tbsp
  • egg - 5 nos
  1. preheat the oven to 275 f
  2. combine the ingredients in a large mixing bowl .Beat  for 5 min until well mixed
  3. Spoon  the mixture into the prepared cake pan .
  4. Make a slight depression in the centre .
  5. Bake in the centre of the oven for 3- 31/2 hours .Cover the top loosely with foil if it starts to brown too quickly .
  6. let the cake cool completely in the pan.

  4. beat with wooden spoon for 2-3 min
  5. the mixture should be pale in color and slightly glossy .
  6. Spoon the mixture into the cake pan and smooth the surface .Bake in the center of the oven for 35 min
